Icelandic Skyr Yogurt Starter Culture

Skyr is technically an Icelandic cheese, although it's normally eaten with berries, jam, or other sweet toppings. This is how it ended up in the yogurt aisle in the United States! Skyr is typically made with skim milk but the rennet helps create a thick, creamy consistency. 

Each bag contains:

  • 2 packets of Skyr yogurt starter culture
  • 2 tablets of rennet

I go the easy route, and it's still good

After seeing that you activate the culture for Skyr the same as other heirloom cultures, I decided to try the Skyr yogurt both ways. I made a batch using rennet (per Skyr instructions), and a batch that I just sat at room temperature without preheating, rennet, or anything (per instructions for other heirlooms). I used whole milk for both. I didn't notice any difference between the two, and I'd rather avoid the rennet AND making half a gallon of yogurt at once (that's a lot to make for a single person!) It's also much thicker than other heirloom cultures. If you appreciate the simplicity of heirloom cultures but would like something thicker (I'd say it's at least twice as thick as Matsoni, which seems to be the thickest of the 4 in the set), try Skyr! You can try it both ways and see which way you like.
