I used the Thermo B Culture in my first actual attempt at making mozzarella and had fantastic results!
I was looking for an alternative for Rejuvilac or pro-biotic pills while making cultured cashew 'cheese' I did an experiment with 4 - 2 cup batches and varied the culture on each... this culture was by far my favorite... it came out very nice even my girlfriend liked this best even though she is traditional and likes my buckwheat rejuvilac. BTW: Your support/customer support said it wouldn't work or that you hadn't tried it or something discouraging. I tried it anyway and it worked great.
Response from CFH: Our cheese cultures do contain dairy and are therefore not suitable for those with allergies or who avoid all dairy products.
Makes good cheese, very good product.
