Of course for mold issues, the most important is also to use airlock, glass or ceramic weighs to keep the keep the vegetables down, and to keep a layer of water floating on the top to protect the vegetables from getting moldy. But this product works. The organic vegetables are the most expensive part of the process, and it is worth spending money on this starter to prevent any of the precious time and ingredients getting wasted. Also ensures that you have good bacterias in your Sauerkraut.
