Jump start my ferments and have never had any problems
I make both Kraut and Beet Kvass. I live in the deep south and during the rather hot summer months, I have had a problem with red and black mold forming, even though I keep the fermenting jars in a cool basement. Of course, increasing the percentage of salt would likely solve the problem, but my wife cannot tolerate "excessive" salt in her fermented vegetables. I add the Cutting Edge Starter Culture for Fresh Vegetable at the beginning of the fermentation process as well as a moderate amount of salt. I no longer have the mold problem.
