I’ve been making kombucha for a couple of years beginning with your regular kit. Recently I wanted to try the black chai spice kombucha.
When it came it contained 2 packets, one with the black tea and one with chai tea spices.
The directions say to steep 2-tsp of tea in 3-1/2 cups of water. Then use that tea to prepare your kombucha, fermenting for 30-days. Now the package didn’t contain a SCOBY or kombucha tea—so I’m not sure how I’d make kombucha with just the tea.
It then says to steep 2-tsp of the chai spice in 1/2 cup of hot water and 1/2 tsp of sugar. I always use 1/2 tsp of sugar and my flavoring for the SECOND ferment and add that to 16-oz bottles to ferment again.
What I did was use my already fermented kombucha that was ready for flavoring and a second ferment—and add the brewed spice mix and 1/2 tsp sugar to that fir each 16 oz bottle.
The directions need to be clear about how the tea in step 1 turns ( after 30-days) into kombucha for step 2. What did I miss?
I would have been quite disappointed to learn the kit didn’t give me what I needed—except that I already had kombucha ready for a second ferment.
