Healthy and fast!
The best thing about Willie the starter is he is consistent. When he is feeling well he doubles or triples in size consistently in 4hours. If Willie gets a little tired you feed him and watch for the peak rise and then feed him again and he gets back on track. In a sentence he is a player I can count on.
He is named Willie because he came from San Francisco and Willie Mays was an amazing player who gave his best everyday he took the field.
I really enjoyed building the starter & baking my first loaf of sourdough bread! Looking forward to doing a lot more baking!
