Wow, wow, wow! Really good and easy. Researched many different recipes that required rennet plus culture. This was so easy, we made our with 1/2 milk and 1/2 cream (rich, but not too rich) — it was so delightful on toasted sourdough bread with cranberries/walnuts/kumquats — and we will probably never go back to store bought cream cheese again. We froze 1/2 and are just taking out of freezer now and hope it is as good as the first 1/2.
